THE UK’s first restaurant to serve food containing cannabis is set to open its doors next month.
Brighton’s The Canna Kitchen will specialise in vegetarian and vegan food, most of which will be infused with cannabis.
But the key ingredient will be the cannabis compound cannabidiol, which is legal in the UK, rather than the stuff that gets you high.
The substance is legal in the UK and is commonly used for medicinal purposes.
According to the restaurant will be using seasonal British ingredients “inspired by world flavours and infused with the healing properties of cannabinoids”.
Dishes will include zaa’tar roast cauliflower, hemp heart tabbouleh, smoked aubergine and sesame cavolo nero.
Restaurant’s founder Sam Evolution said he has been working with hemp for many years including making cosmetics and creams and has been thinking about opening a restaurant for a long time.
“It is one of the most versatile crops in nature, with potential applications in almost every area of our modern life,” he told The Argus.
“It also happens to be the most nutritionally complete human food source on the planet, with a host of therapeutic benefits.
“We are seeking to change misconceptions around this plant by introducing it to people in a form they may not have encountered before.”
Head chef Charlotte Kjaer said she wanted to create “honest, balanced and vibrant food”.

Restrictions and laws for medicinal use of cannabis and cannabis oil were relaxed on November 1.
It follows several high-profile cases, including young epilepsy sufferers Alfie Dingleyand Billy Caldwell, whose conditions appeared to be helped by cannabis oil.
But anyone found possessing cannabis can be sentenced to a maximum of five years in prison, an unlimited fine or both punishments under UK legislation.
