SLOW COOKERS are making a fast comeback – and you can pick one up for less than £15.


The Seventies fixtures can be safely left on all day or night, use little electricity, and their lower temperatures help preserve nutrients.

They also make delicious, warming food. To prove it, here are three slow cooker breakfast recipes.


Put the ingredients in before you go to bed and wake up to amazing smells coming from your kitchen. They’re great for busy weekday mornings and relaxing weekend breakfasts, too.


Overnight sausage frittata


£6.47 — £1.62pp


Serves 4

Wake up to a tasty sausage frittata which is great for saving time on busy days

Prep: 20 mins


Cooking time overnight: Minimum 3 hours


YOU NEED:



  • 4 Morrisons The Best thick pork sausages

  • Low-fat oil spray

  • 6 medium eggs

  • 150g cheddar cheese, grated

  • 1 red pepper, diced

  • 1 orange pepper, diced

  • 1 large onion, diced

  • ¼ tsp paprika

  • ¼ tsp dried thyme

  • ¼ tsp salt

  • ¼ tsp black pepper, freshly ground

  • 2 tbsp semi-skimmed milk

  • 3 tbsp fresh flat leaf parsley, finely chopped

  • 10 cherry tomatoes, halved


METHOD: Heat a large frying pan and brown the sausages for 10 minutes. Next spray the inside of the slow cooker well with the oil, on the bottom and up the sides.


Whisk the eggs together with the cheese and added in the peppers, onions, paprika, thyme, salt, pepper and milk. Add in 2 tbsp of parsley but keep the remainder to decorate in the morning, storing it in an airtight container in the fridge.


Chop the sausages into inch-size pieces and add to the egg mixture. Add the mixture to the slow cooker and decorate the top with the tomatoes. Put the slow cooker on a slow setting and cook overnight.


If you wake up early and are waiting for guests or family to rise then turn the cooker off – the egg will keep warm for 30 minutes. Or if your slow cooker has a warm setting then turn that on. When ready to serve put a spatula around the edge of the frittata and slide on to a warmed plate.


Serve topped with the remainder of the parsley.




TIP: For a healthier version you can use low-fat sausages and egg whites. For a kick, add in chopped chilli.



Overnight breakfast beans

Use chickpeas or kidney beans if you like for Mrs Crunch’s tasty recipe

Preparation time: 5 minutes


Cooking time overnight: Approx 8 hours


YOU NEED:



  • 1 onion, diced

  • 2 garlic cloves, chopped

  • 1 tbsp white or red wine vinegar

  • 1 heaped tbsp soft brown sugar

  • 400g can pinto beans, drained and rinsed

  • 400g can black-eyed beans

  • 400ml passata

  • 1tsp thyme

  • 1tsp rosemary

  • 2tsp paprika

  • 2 bay leaves

  • Small bunch coriander, chopped


METHOD: Simply put everything into the slow cooker and put on a low heat overnight.




TIP: Use chickpeas or kidney beans if you like. Great with sausages and toast.

Slow cooker apple and cinnamon porridge

Serves 4

Top this tasty porridge recipe with fresh fruit or sultanas

Preparation time: 15 mins


Cooking time: 7 hours


YOU NEED:



  • 2 tbsp butter

  • 90g porridge oats

  • 700ml semi-skimmed milk

  • 2 to 3 tbsp brown sugar (optional)

  • 1/2 to 1 tsp ground cinnamon

  • 2 large apples – peeled, cored and cubed


METHOD: Grease the inside of your slow cooker with the butter to stop the porridge sticking.


Put all the ingredients except for the apples into the cooker. Give it all a good stir, to mix well, and dissolve the sugar (if using).


Add the apples, turn the cooker on to low and cook for seven hours. Spoon into warmed bowls and serve.




TIP: Use less or more milk, depending on how creamy you like it. Or use half milk, half water. Top with sultanas and fresh fruit.
