With some great wine launches, including low-alcohol and low-calorie alternatives, it is a good time to try a new tipple.

Chicken & Leek Pie


(Serves four)

This chicken and leek pie is a deliciously warming winter meal[/caption]


YOU NEED:



  • 1 drizzle olive oil;

  • 4 rashers unsmoked streaky bacon, diced;

  • 500g chicken thigh meat, diced into 2cm pieces;

  • 2 leeks, trimmed and sliced thickly;

  • 150ml white wine;

  • 2 tbsp plain flour;

  • 200ml chicken stock;

  • 200ml whipping cream;

  • 1 tbsp wholegrain mustard;

  • 1 whole egg, beaten

  • 320g puff pastry, ready rolled


METHOD: Preheat oven to 220C/200C fan/gas 7. Drizzle a little olive oil in a saucepan, then add the bacon and chicken. Sauté over a medium heat for five minutes. Add the onion and leeks and cook for five minutes. Add the white wine, bring to the boil and cook for five minutes.


Add the flour, mix well to combine and cook for a minute. Add the chicken stock, bring to the boil then reduce to a simmer for 20 minutes.


Then add the cream and mustard. Stir and bring to the boil. Boil for ten minutes to reduce the sauce. Season to taste.


Spoon the chicken and leek mix into a pie dish (dish should be approximately 23cm x 30cm). Brush a little beaten egg around the lip of the pie dish. Then, unroll the puff pastry and place over the top of the chicken and leek pie filling. Trim away any excess pastry.


Crimp the edges using your fingers or a fork. Brush the pastry lightly with the beaten egg and, using kitchen scissors, snip three holes in the pastry. This will allow the steam to escape.


Bake in the preheated oven for 20 minutes or until the pastry is golden brown and risen.

  • NEW FRONTIERS: Dare to cross the Spanish border and you’ll find some great Portuguese wines. Try Sainsbury’s Taste The Difference Portuguese Alvarinho, 75cl, a fresh, zesty white, now £7, saving 50p.

  • WAIST-WATCHING: Iceland has just reduced the price of its lower-calorie Streamline wines to £4.99. The Streamline Shiraz, for example, has 65 calories in a 125ml glass and just 6.4 units in a bottle. And Ocado has recently started selling La Gioiosa 63Kcal Prosecco, £12.99.

  • OWN-BRAND BEAUTIES: Supermarket-own ranges can offer great value and Morrisons’ new line is no exception. With all the favourite varieties, including Merlot, Shiraz, Chardonnay and Pinot Grigio for £4.50, you can afford to try out all the range. To save even more, the store’s new Myton Hill range comes in at £4 a bottle.

  • GO LOW: Lower-alcohol wines are shedding their poor image and sales are soaring. Tesco Low-Alcohol Sparkling White Wine, Sauvignon Blanc, Garnacha Rosé and Cabernet Tempranillo are all £2.75 and contain less than 0.5 per cent alcohol by volume or less.  Asda’s Be Free wines, including Chardonnay, Merlot and Rosé, are just £2.48 and contain 0.05 per cent ABV.

Sausage & Mustard Mash with Red Onion


(Serves four)

YOU NEED:



  • 8 whole sausages;

  • 1kg white potatoes; peeled

  • 25g butter;

  • 2 whole red onions, sliced;

  • 2 sprigs thyme;

  • 150ml red wine;

  • 500ml beef stock;

  • 2 tbsp wholegrain mustard;

  • 2 tbsp creme fraice


TO MAKE: To cook the sausages preheat the oven to 200C/180C fan/gas 6. Place the sausages on to a baking tray and cook for 15 minutes until golden brown and piping hot. Meanwhile, to make the mash, place the peeled potatoes into a large saucepan with water and bring to the boil.


Boil for 15 minutes or until the potatoes are tender and starting to fall apart. Drain, return to the pan and mash. Set to one side. To make the red onion gravy melt the butter in a large frying pan, adding the sliced red onions and thyme. Sauté over a gentle heat for ten minutes, stirring occasionally.


Add the red wine, bring to the boil and reduce until the sauce has thickened. Sprinkle over the flour, stir well to combine and cook for a minute.


Add the beef stock and simmer for ten minutes. Remove the sprigs of thyme and season to taste. Set to one side. Add the wholegrain mustard and crème fraîche to the mash and mix well. Season to taste.


Spoon a dollop of mustard mash into a serving bowl, top with two sausages and spoon over the gravy.

  • WHITES: Get two selected bottles of red or white wine for £11 at Iceland, including Echo Falls Pinot Grigio, £6 a bottle.  Buy two for £10 on Hardys Bankside Chardonnay at Morrisons, or £6.25 each.  Save on Kiwi Cove Sauvignon Blanc, was £7.98, now £6 at Asda.

  • RED: Save £1.50 on La Bodega Malbec at Morrisons, down from £7.50 to £6.  Save 20 per cent on Lidl’s award-winning Cimarosa South African Pinotage, down from £3.89 to £2.99.  Save £1.25 on Campo Viejo Rioja Garnacha at Ocado, now £6.75.

  • FIZZ: Save a quarter on San Leo Brut Prosecco, was £10, now £7.29 at Waitrose.   Save £5 on Abbazia Prosecco Extra Dry NV at Ocado, £7.99, down from £12.99.  Save a third on Prosecco Valdobbiadene at M&S, down from £14 to £9.33.
