Mother's Day is almost here and mothers everywhere most likely need a little break. Why not put together a Mother's Day brunch to let the mother in your life know just how loved she is.
Try a few new appetizers with flavors that will make her smile. Pay attention to what it is she loves. If it's chocolate or nuts, champagne or fruit...take her favorite ingredients and put them together just for her.

Brie & Raspberry-Almond Cups
Ingredients:
- 1 small wheel of brie cheese (1/2 lb), rind removed
- 1 small package of fresh raspberries (approx. 36)
- 1/2 pkg of Phyllo dough sheets (four rectangles)
- 4 Tbsp sliced almonds
- 4 Tbsp raspberry preserves
- 1/2 cup butter, melted
Directions:
- Place 1 sheet of Phyllo dough onto work surface and brush with butter. Wrap damp kitchen towels around remaining Phyllo dough to keep dough slightly moist and easy to work.
- Using a 3-inch round cookie cutter (or water glass), cut Phyllo dough into 18 circles.
- Lightly butter two mini-muffin tins. Place a Phyllo circle into muffin cups and press gently down on each one. Make sure to press dough along muffin sides to make a dough cup.
- Preheat oven to 350° F and bake for 20 minutes.
- Place a small dollop of raspberry preserves into bottom of cups. Top with a small square of brie cheese.
- Place several sliced almonds and two fresh raspberries in each and bake for 10 minutes at 350°. Makes 18.
Strawberries Dipped in Champagne & Chocolate
Ingredients:
- 1 pint of fresh strawberries
- 1 pint of dipping chocolate
- 1 bottle of champagne (your choice)
Directions:
- Remove green top from each fresh strawberry, place in Tupperware bowl.
- Cover strawberries with champagne of choice in bowl for an hour, at minimum.
- Dip strawberries one by one into melted chocolate.
- Place dipped strawberries onto baking sheet in freezer. Can store overnight and serve on tray.
Decorate for Mother's Day
Take several wine glasses and turn them upside-down on a tray. Place different-colored large candles on top of each upside-down wine glass.
